Coconut Chia Pudding with Mango & White Coconut Spread

Preparation time: ±10 min + overnight soaking 
Servings: 1–2 portions 

Ingredients: 

  • 2 tbsp La Vida Vegan white coconut spread  
  • 150 ml coconut milk (or coconut water)  
  • 2 tbsp chia seeds  
  • 1 mango  
  • Extra: shredded coconut (optional, for garnish)  

Instructions: 

  1. Mix the coconut milk with the La Vida Vegan white coconut spread until smooth.  
  1. Add the chia seeds and stir well. Transfer to a sealable jar and place in the refrigerator overnight. Stir again after a few minutes to prevent clumps.  
  1. Peel the mango and cut the flesh away from the pit. Dice one half into small cubes and blend the other half into a puree.  
  1. Stir the chia pudding well once more.  
  1. Add a layer of mango puree to a glass.  
  1. Spoon the chia pudding on top.  
  1. Finish with the mango cubes and, if desired, some extra mango puree.  
  1. Garnish with a little shredded coconut.  
  1. Give it a quick stir before eating if you like, and serve immediately.  

Tip: For extra flavor, add a pinch of lime zest or top with some granola for crunch.
