Pistachio Twists 

Makes approx. 12 pieces 
Prep time: about 20 minutes 

Ingredients: 
2 sheets of puff pastry (or a plant-based alternative) 
1 jar La Vida Vegan pistachio spread 
50 g pistachios, finely ground 
1 egg (or a plant-based alternative) 

Method: 

  1. Preheat the oven to 170°C and line a baking tray with baking paper. 
  1. Roll out one sheet of puff pastry and generously spread it with La Vida Vegan pistachio spread. 
  1. Sprinkle with 40 g of the finely ground pistachios. 
  1. Place the second sheet of puff pastry on top and gently press down. 
  1. Cut the pastry into wide strips of about 4 cm using a pizza cutter. 
  1. Twist each strip and place them on the prepared baking tray. 
  1. Beat the egg and brush it over the twists for a nice golden finish. 
  1. Bake the pistachio twists for 12–15 minutes, until golden brown, crisp and cooked through. 
  1. Before serving, finish with a drizzle of La Vida Vegan pistachio spread, icing sugar and the remaining ground pistachios. 

Tip: Also delicious as a party snack, best served slightly warm.
