Quick Strawberry Pistachio Latte


Serves: 2 glasses
Time: approx. 10 minutes

What you’ll need:

  • High-speed blender
  • Citrus juicer
  • Measuring spoons
  • Glasses
  • Sieve (optional, for extra smooth pistachio milk)

Ingredients:

For the pistachio milk:

  • 20 g unsalted, unroasted pistachios
  • 1½ tbsp La Vida Vegan pistachio spread
  • 200 ml vegan whipping cream
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • Pinch of salt

For the strawberry swirl:

  • 300 g fresh strawberries
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • 50 g ice cubes

Extra:

  • Ice cubes for serving

Method:

  1. Add the pistachios, La Vida Vegan pistachio spread, 50 ml vegan cream, vanilla extract, lemon juice and salt to the blender. Blend on high speed for 60–90 seconds.
  2. Optional: strain the mixture through a sieve for an extra smooth texture.
  3. Whip the remaining vegan cream until light, then gently fold in the pistachio mixture. Don’t overmix – it doesn’t need to be completely uniform.
  4. Blend the strawberries with the maple syrup, lemon juice and ice cubes until smooth to create a fresh strawberry coulis.
  5. Fill two glasses with ice. Pour in the strawberry coulis first, then gently top with the pistachio milk to create a pretty swirl.
  6. Serve immediately with a straw or spoon. Give it a gentle stir for a marbled effect.
