Ingredients:
- 1 roll of vegan croissant dough
- 100 g pistachios (unsalted, shelled)
- 6 tbsp La Vida Vegan pistachio spread
- 1 vegan egg replacer
The instructions:
- Preheat the oven to 200°C. Place a rectangular cake tin on the bottom shelf of the oven and fill it with 2 litres of boiling water. This creates a warm, humid environment, perfect for proving the dough.
- Roughly chop the pistachios and set them aside. Melt the plant-based margarine and have it ready for use.
- Roll out the vegan croissant dough on a clean work surface into a large rectangle. Cut the dough into strips about 3 cm wide using a pizza cutter or knife.
- Spread the pistachio spread evenly over half of the dough strips. Sprinkle the chopped pistachios on top.
- Lay the remaining dough strips over the coated ones, ensuring the top strip extends about 2 cm above the bottom strip. This creates a lovely layered effect in the cruffins.
- Roll the strips up tightly from the bottom, folding the ends underneath to create a neat, compact roll. Gently press a small hole in the centre of each rolled cruffin with your finger.
- Place the unbaked cruffins into a muffin tin. Position the muffin tin on the top rack of the oven, above the cake tin with hot water. Close the oven without turning on the heat and allow the dough to rise for 1 hour in this warm, moist environment.
- In a small bowl, prepare a vegan “egg” (e.g. a mixture of plant-based milk and a spoonful of cornflour or a commercial egg replacer). Lightly brush this mixture over the tops of the cruffins.
- Remove the cruffins from the oven and preheat it to 200°C. Bake the cruffins for 10 minutes at this temperature, then reduce the heat to 170°C and bake for another 5–10 minutes, depending on the size of your cruffins, until they are golden brown and crispy.
- As soon as the cruffins come out of the oven, you can optionally roll them in white granulated sugar for a sweet, glossy coating. Be quick with this step, as the sugar won’t stick once the cruffins have cooled completely.
- Allow the cruffins to cool slightly on a wire rack before serving. They’ll be delightfully crispy on the outside and soft and fluffy on the inside!
