Serves: 1 person (per glass)
Ingredients:
125 ml whipping cream
1 tbsp vanilla sugar
1 tbsp La Vida Vegan white coconut spread
A handful of blackberries
Instructions:
- Whip the cream together with the vanilla sugar until soft peaks form.
- Gently fold the La Vida Vegan white coconut spread into the whipped cream until it becomes a creamy mousse.
- Spoon the mousse into a glass or dessert glass.
- Place the glass in the fridge for at least 15 minutes so the mousse can firm up slightly.
- Garnish with fresh blackberries just before serving.
Tip: Also delicious with raspberries, mango or toasted coconut flakes for extra flavour and texture.
