White Coconut Mousse with Blackberries

Prep time: ±10 min
Chilling time: ±15 min
Serves: 1 person (per glass)

Ingredients:
125 ml whipping cream
1 tbsp vanilla sugar
1 tbsp La Vida Vegan white coconut spread
A handful of blackberries

Instructions:

  1. Whip the cream together with the vanilla sugar until soft peaks form.
  2. Gently fold the La Vida Vegan white coconut spread into the whipped cream until it becomes a creamy mousse.
  3. Spoon the mousse into a glass or dessert glass.
  4. Place the glass in the fridge for at least 15 minutes so the mousse can firm up slightly.
  5. Garnish with fresh blackberries just before serving.

Tip: Also delicious with raspberries, mango or toasted coconut flakes for extra flavour and texture.
