Baked Banana Oats


Serves 4:

Ingredients:

  • 2 ripe bananas, mashed
  • 180 g oats
  • 2 tbsp La Vida Vegan almond spread
  • 250-375 ml plant-based milk (e.g. oat or almond milk)
  • 50 g pecans or walnuts, roughly chopped (plus extra for topping)
  • 50 g raisins or biscuits
  • 1 carrot, grated
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • A pinch of salt

For the topping:

  • Coconut yoghurt





The instructions:

  1. Preheat the oven to 180°C.
  2. Mash the bananas and add the oats, cinnamon, vanilla extract, baking powder, and salt.
  3. Mix well, then add the plant-based milk and two tablespoons of La Vida Vegan almond spread. Stir again until fully combined.
  4. Fold in the grated carrot, chopped nuts, and raisins (or biscuits).
  5. Pour the mixture into a lightly greased baking dish (20×20 cm) or line it with baking paper.
  6. Bake for 35-40 minutes, or until the top is golden brown and the baked oats are firm.
  7. Allow to cool before adding the coconut yoghurt and extra chopped nuts on top.
