White Bean Coconut Dip


Ingredients:

  • 1 tin (400 g) white beans (tip: cannellini beans! (chickpeas work too!)), drained and rinsed
  • 2 cloves of roasted garlic (squeeze out the soft cloves)
  • Zest of 1 orange
  • 2 tbsp freshly squeezed orange juice
  • 1 tbsp La Vida Vegan coconut spread
  • ¼ tsp salt
  • ¼ tsp pepper





The instructions:

  1. Add the white beans, roasted garlic, orange zest, orange juice, and La Vida Vegan coconut spread to a blender or food processor.
  2. Blend until smooth and creamy. If needed, add a splash of coconut milk to achieve the desired consistency.
  3. Season with salt and pepper to taste.
  4. Serve in a bowl and optionally garnish with extra orange zest and a drizzle of coconut milk.

Perfect with freshly baked bread, crunchy crackers, or vegetable sticks. Enjoy! 😊
