Ingredients:
- 1 tin (400 g) white beans (tip: cannellini beans! (chickpeas work too!)), drained and rinsed
- 2 cloves of roasted garlic (squeeze out the soft cloves)
- Zest of 1 orange
- 2 tbsp freshly squeezed orange juice
- 1 tbsp La Vida Vegan coconut spread
- ¼ tsp salt
- ¼ tsp pepper
The instructions:
- Add the white beans, roasted garlic, orange zest, orange juice, and La Vida Vegan coconut spread to a blender or food processor.
- Blend until smooth and creamy. If needed, add a splash of coconut milk to achieve the desired consistency.
- Season with salt and pepper to taste.
- Serve in a bowl and optionally garnish with extra orange zest and a drizzle of coconut milk.
