Blackberry coconut smoothie


Ingredients
Makes 2 smoothies

3 tbsp La Vida Vegan white coconut paste
200 ml coconut yogurt
125 g blackberries (fresh or frozen)
1 tsp vanilla extract
4 tbsp puffed quinoa

Optional: sweetener to taste (honey, maple syrup or agave syrup)

If using frozen blackberries, let them thaw slightly before you start.

The instructions

  1. Make sure your coconut yogurt is well chilled for a nice cool smoothie.
  2. Keep a few blackberries behind for garnish.
  3. Put one tablespoon of La Vida Vegan white coconut paste, half of the coconut yogurt, the rest of the blackberries and the vanilla extract in a bowl and mash the blackberries with a fork.
  4. Taste the mixture and adjust the sweetness if necessary by adding more sweetener.
  5. Divide the coconut yogurt between glasses.
  6. Spoon half of the blackberry yogurt mixture on top of the coconut yogurt.
  7. Spread some La Vida Vegan white coconut paste over the blackberry yogurt.
  8. Spoon the rest of the blackberry yogurt on top of the La Vida Vegan white coconut paste.
  9. Garnish with a spoonful of puffed quinoa and a blackberry on top.

Serve the blackberry coconut smoothie immediately and enjoy it as a refreshing breakfast, snack or even dessert.
