Popcorn Nut Snack Bars

Makes 10 pieces

100 g popcorn
60 g almonds
60 g pistachios
20 g sesame seeds
175 g maple syrup or agave syrup
140 g peanut butter
80 g La Vida Vegan dark chocolate spread
20 g dark chocolate

The instructions

  1. Mix the popcorn, almonds, pistachios, and sesame seeds in a large bowl.
  2. Heat the peanut butter and maple syrup in a small saucepan over medium heat for 2 to 3 minutes until the mixture is thoroughly warm.
  3. Pour the warm peanut butter-maple mixture over the popcorn and seed mixture and stir until it is completely mixed.
  4. Transfer the mixture into a 20 cm x 20 cm square baking pan lined with parchment paper.
  5. Press the mixture firmly down into the pan and refrigerate for 1 hour to set.
  6. Cut into bars measuring 4 cm by 10 cm.
  7. Melt the La Vida Vegan dark chocolate spread and dark chocolate together either au bain-marie or in the microwave.
  8. Dip the ends of each bar into the melted chocolate, then place the bars on a baking sheet lined with parchment paper.
  9. Chill in the refrigerator for 10 minutes to set the chocolate.
  10. Serve and enjoy your homemade snack bars.
