Cherry chocolate mousse

For 4 persons

For the chocolate mousse
4 tbsp. of La Vida Vegan chocolate spread
100 g pure chocolate
2 cans of chicken peas
1 tsp. vanilla extract
1 tsp. lemon juice
100 g cane sugar

6 tbsp. coconut yoghurt
1 jar cherries
Fresh cherries
Chocolate shavings

Drain the cherries in a sieve and put aside. Let the chicken peas drain in a sieve and collect the fluid (aquafaba). Cook the aquafaba until half of it remains. Let it cool down in the fridge. In the meantime, melt the La Vida Vegan chocolate spread and the pure chocolate au bain-marie and put aside. Whisk the cooled down aquafaba a little and add, little by little, the cane sugar. Whisk until firm peaks emerge. Mix the melted chocolate with the aquafaba until it becomes a smooth mousse. Fill the glasses little by little with the chocolate mousse and cherries. Put quite a scoop of yoghurt on top and top off with chocolate mousse, chocolate shavings and fresh cherries.
