Chocolate apricot balls


For 10 pieces

100 g La Vida Vegan pure chocolate spread
100 g chocolate
175 g dried apricots + extra for garnishing
100 g blank almonds
30 g coconut shavings
50 ml coconut oil, melted
1 tbsp. maple syrup
1 orange, grated
½ vanilla pod, vanilla bean caviar

Pour the dried apricots, almonds, coconut shavings, melted coconut oil, maple syrup, grated orange and vanilla bean caviar into a food processor and mix until it has become a smooth cream. Cover an oven tray with baking sheets and roll small balls of the apricot mixture. Melt half of the pure chocolate au bain-marie and get the bowl from the stove. Now add the La Vida Vegan pure chocolate spread and the rest of the pure chocolate and mix until you have a smooth mixture. Cover the apricot balls with the chocolate and garnish them with little pieces of apricot. Let the chocolate harden and serve straight away.
