Chocolate Pancakes with Pear


Ingredients:

  • 125 g flour (preferably wheat or spelt flour)
  • 250 ml plant-based milk
  • 1 tbsp vanilla sugar
  • 1 tsp baking powder
  • 1 tbsp baking soda
  • salt
  • spices of your choice (biscuit spice, cinnamon, nutmeg, ginger)
  • 1 pear
  • La Vida Vegan chocolate spread
  • Olive oil

    *This makes about 8 small pancakes.





The instructions:

  1. Cut the pear into wedges and remove the core.
  2. Cut the segments into thinner slices and sprinkle with cinnamon.
  3. Pre-bake for 5 min in a preheated 180-degree oven.
  4. Put the flour in a bowl and pour in the plant-based milk little by little. Beat with a whisk to a smooth batter.
  5. Add the vanilla sugar, baking powder, baking soda and a pinch of salt.
  6. Mix in the spices. Amount to taste, for example: half a teaspoon of cinnamon and a pinch of nutmeg.
  7. Heat a little oil in a frying pan over medium-high heat.
  8. Scoop a small amount of batter into the pan for each pancake. Place 3 slices of pear on top.
  9. Fry the pancakes for about 2-3 minutes per side, until nicely golden brown and the pear is soft.
  10. Serve the pancakes warm, with La Vida Vegan almond paste. Finish them off with some almond shavings and extra maple syrup on top.
