No-Bake Coconut Balls with White Coconut Spread

Preparation time: ±25 minutes 
Servings: ±10–12 balls 

Ingredients: 

  • 125 g shredded coconut + extra (for coating)  
  • 1 tbsp coconut oil  
  • 1 tbsp La Vida Vegan white coconut spread  

Instructions: 

  1. Add 75 g of shredded coconut to a food processor and blend for 5–10 minutes until it turns into a fine, slightly oily paste.  
  1. Add the coconut oil and blend further until the mixture becomes warmer and smoother.  
  1. Add the La Vida Vegan white coconut spread and blend until creamy.  
  1. Mix in the remaining 50 g of shredded coconut for extra texture.  
  1. Roll the mixture into small balls using your hands.  
  1. Roll the balls in extra shredded coconut for a nice coating.  
  1. Place them in the refrigerator for 5–10 minutes to firm up.  

Tips: Is the mixture too wet? Add extra shredded coconut. Is it too dry? Add a bit more La Vida Vegan coconut spread.
