Makes about 8 servings
Preparation time: 10 minutes + 19 minutes baking time
Ingredients:
- 80 g rolled oats
- 150 g pistachios
- 60 ml maple syrup
- 1 tbsp coconut oil or sunflower oil
- Pinch of salt
- 2 tbsp La Vida Vegan pistachio spread (for topping)
Instructions:
- Preheat the oven to 170 °C.
- Blend the oats and pistachios in a food processor until they form a fine flour.
- Add the maple syrup, coconut oil, and La Vida Vegan pistachio spread, and mix into a firm batter.
- Spread the batter evenly into a loaf tin lined with baking paper, using a wooden spatula.
- Bake for 15–18 minutes until golden brown and cooked through.
- Let cool on the baking tray, then cut into pieces.
- Optionally, finish with a swirl of La Vida Vegan pistachio spread.
