Pistachio Cookie bar


Makes about 8 servings
Preparation time: 10 minutes + 19 minutes baking time

Ingredients:

  • 80 g rolled oats
  • 150 g pistachios
  • 60 ml maple syrup
  • 1 tbsp coconut oil or sunflower oil
  • Pinch of salt
  • 2 tbsp La Vida Vegan pistachio spread (for topping)

Instructions:

  1. Preheat the oven to 170 °C.
  2. Blend the oats and pistachios in a food processor until they form a fine flour.
  3. Add the maple syrup, coconut oil, and La Vida Vegan pistachio spread, and mix into a firm batter.
  4. Spread the batter evenly into a loaf tin lined with baking paper, using a wooden spatula.
  5. Bake for 15–18 minutes until golden brown and cooked through.
  6. Let cool on the baking tray, then cut into pieces.
  7. Optionally, finish with a swirl of La Vida Vegan pistachio spread.
