Pistachio Cookies


Ingredients:

  • 130 g pistachios (just barely crushed)
  • 240 g (vegan) margarine/butter
  • 90 g sugar
  • 1 tsp vanilla extract
  • 275 g flour
  • green food colouring
  • pinch of salt
  • La Vida Vegan pistachio spread





The instructions:

  1. Combine the vegan butter and sugar together in a bowl until the mixture is fluffy and creamy. This will take about 2-3 minutes.
  2. Add the vanilla extract, pistachios, a little green food colouring (as desired), a pinch of salt and the flour.
  3. Mix briefly to form an even dough.
  4. The dough should be firm but malleable, do not mix too long to keep it fluffy.
  5. Roll small balls of the dough, about the size of a walnut, and place them on a baking sheet lined with baking paper.
  6. Lightly flatten them if you want them to be slightly less convex.
  7. Preheat the oven to 170 °C.
  8. Bake the cookies for 12-15 minutes, until the edges begin to color slightly but the cookies themselves still feel soft.
  9. Let the cookies cool on the baking sheet for a few minutes, then carefully place them on a wire rack to cool completely.
  10. Spread a generous layer of La Vida Vegan pistachio spread between 2 cookies and enjoy!
