Ingredients:
- 130 g pistachios (just barely crushed)
- 240 g (vegan) margarine/butter
- 90 g sugar
- 1 tsp vanilla extract
- 275 g flour
- green food colouring
- pinch of salt
- La Vida Vegan pistachio spread
The instructions:
- Combine the vegan butter and sugar together in a bowl until the mixture is fluffy and creamy. This will take about 2-3 minutes.
- Add the vanilla extract, pistachios, a little green food colouring (as desired), a pinch of salt and the flour.
- Mix briefly to form an even dough.
- The dough should be firm but malleable, do not mix too long to keep it fluffy.
- Roll small balls of the dough, about the size of a walnut, and place them on a baking sheet lined with baking paper.
- Lightly flatten them if you want them to be slightly less convex.
- Preheat the oven to 170 °C.
- Bake the cookies for 12-15 minutes, until the edges begin to color slightly but the cookies themselves still feel soft.
- Let the cookies cool on the baking sheet for a few minutes, then carefully place them on a wire rack to cool completely.
- Spread a generous layer of La Vida Vegan pistachio spread between 2 cookies and enjoy!
