Purple Sweet Potato Latte


Serves: 2 glasses 
Preparation time: approx. 15 minutes 

Ingredients: 

  • 200 g purple sweet potato 
  • 500 ml plant-based milk (e.g. coconut drink) 
  • 2 tbsp La Vida Vegan coconut spread 
  • Vanilla extract (optional) 
  • Optional: sweetener to taste (e.g. maple syrup) 

Instructions

  1. Cook or steam the purple sweet potato until soft, then mash until smooth. 
  2. Heat the plant-based milk in a saucepan. Add the La Vida Vegan coconut spread and the mashed sweet potato, whisking until smooth and creamy. 
  3. Sweeten to taste and pour into glasses. 
  4. Serve warm.
