Weckmann with Chocolate Spread 


Makes: 10 pieces 
Preparation time: approx. 2 hours (including rising) 
Baking time: 14–18 minutes 

Ingredients: 

  • 500 g flour
  • 250 ml plantbased milk  
  • 100 g margarine 
  • 90 g sugar 
  • 1 packet vanilla sugar 
  • Pinch of salt 
  • 40 g fresh yeast or 15 g dried yeast 
  • 1 banana, mashed 
  • 1 tbsp plant-based milk (for brushing) 
  • 1 jar La Vida Vegan chocolate spread 

Instructions

  1. Warm the milk until lukewarm (no more than 30–35 °C). Remove from the heat, crumble in the yeast, add 1 tablespoon of sugar, and let it sit for 10 minutes. 
  2. Melt the margarine over low heat and let it cool slightly. In a large bowl, combine the flour, sugar, vanilla sugar, mashed banana, salt, melted margarine, and the yeast mixture. Knead into a smooth dough, adding a little extra flour if needed. 
  3. Cover and let the dough rise in a warm place for 60 minutes. 
  4. Divide the dough into 10 portions, shape each into a ball, and let them rest for 20 minutes. 
  5. Roll out each ball slightly and use a cookie cutter to cut out Weckmann (or Weckfrau) shapes. 
  6. Brush the figures with a bit of plant-based milk. 
  7. Bake in a preheated oven at 170 °C (fan oven) for about 14–18 minutes, until golden brown and cooked through. 
  8. Allow to cool, slice in half, and generously spread with La Vida Vegan chocolate spread.
