Preparation time: approx. 2 hours (including rising)
Baking time: 14–18 minutes
Ingredients:
- 500 g flour
- 250 ml plantbased milk
- 100 g margarine
- 90 g sugar
- 1 packet vanilla sugar
- Pinch of salt
- 40 g fresh yeast or 15 g dried yeast
- 1 banana, mashed
- 1 tbsp plant-based milk (for brushing)
- 1 jar La Vida Vegan chocolate spread
Instructions
- Warm the milk until lukewarm (no more than 30–35 °C). Remove from the heat, crumble in the yeast, add 1 tablespoon of sugar, and let it sit for 10 minutes.
- Melt the margarine over low heat and let it cool slightly. In a large bowl, combine the flour, sugar, vanilla sugar, mashed banana, salt, melted margarine, and the yeast mixture. Knead into a smooth dough, adding a little extra flour if needed.
- Cover and let the dough rise in a warm place for 60 minutes.
- Divide the dough into 10 portions, shape each into a ball, and let them rest for 20 minutes.
- Roll out each ball slightly and use a cookie cutter to cut out Weckmann (or Weckfrau) shapes.
- Brush the figures with a bit of plant-based milk.
- Bake in a preheated oven at 170 °C (fan oven) for about 14–18 minutes, until golden brown and cooked through.
- Allow to cool, slice in half, and generously spread with La Vida Vegan chocolate spread.
