Ingredients:
Truffles:
- 200 g desiccated coconut
- 150 g La Vida Vegan White Coconut Spread (+ 50 g extra for rolling)
- 200 g condensed coconut milk
Decoration:
- Candy belts (for scarves)
- Black icing (for eyes and buttons)
- Orange icing (for a carrot nose)
- Pretzels (for arms)
* Makes approximately 8-10 snowmen
The instructions:
- In a large bowl, mix the desiccated coconut, 150 g of La Vida Vegan White Coconut Spread, and the condensed coconut milk.
- Stir well until the mixture comes together into a firm, kneadable dough.
- Roll small balls from the truffle mixture.
- For each snowman, make two balls: one larger (for the body) and one smaller (for the head).
- Roll the balls in the extra 50 g of desiccated coconut to give them a snowy appearance.
- Stack the two balls on top of each other, starting with the larger ball at the bottom. Use a small dab of coconut spread as “glue” to hold the layers together.
- Place the snowmen carefully on a baking sheet or plate and refrigerate for 20 minutes to firm up.
- Use black icing to draw eyes, a mouth, and buttons.
- Add a nose with the orange icing.
- Break pretzels into small pieces and insert them into the middle layer as arms.
- Add candy belts as scarves for a festive touch.
- Remove the snowman truffles from the fridge and serve immediately.
