Ingredients:
- 700 ml plant-based milk (e.g. almond milk)
- 1 can full-fat coconut milk (400 ml)
- 80 ml maple syrup
- 1 tbsp amaretto (optional)
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tsp pure vanilla extract
- ¼ tsp ground cardamom
- 4 tbsp La Vida Vegan White Coconut Spread
For decoration:
- White coconut truffles
- La Vida Vegan White Coconut Spread
- Shredded coconut
Instructions:
- Coat the rim of your glass with La Vida Vegan White Coconut Spread.
- Dip the rim into shredded coconut and set aside.
- Add the plant-based milk, coconut milk, maple syrup, cinnamon, nutmeg, vanilla and cardamom to a saucepan.
- Add 4 tbsp La Vida Vegan White Coconut Spread for that creamy, soft coconut flavour.
- Heat over medium heat, whisking well until everything dissolves and the mixture thickens slightly (do not let it boil!).
- Stir in the amaretto at the end, if using.
- Serve the eggnog warm or chilled in the prepared glasses, topped with a coconut truffle and a sprinkle of extra coconut.
