Vegan Coconut Snowball Eggnog 

Makes: ± 4 glasses

Ingredients: 

  • 700 ml plant-based milk (e.g. almond milk) 
  • 1 can full-fat coconut milk (400 ml) 
  • 80 ml maple syrup 
  • 1 tbsp amaretto (optional) 
  • ½ tsp ground cinnamon 
  • ¼ tsp ground nutmeg 
  • 1 tsp pure vanilla extract 
  • ¼ tsp ground cardamom 
  • 4 tbsp La Vida Vegan White Coconut Spread 

For decoration: 

  • White coconut truffles 
  • La Vida Vegan White Coconut Spread 
  • Shredded coconut 

Instructions: 

  1. Coat the rim of your glass with La Vida Vegan White Coconut Spread. 
  1. Dip the rim into shredded coconut and set aside. 
  1. Add the plant-based milk, coconut milk, maple syrup, cinnamon, nutmeg, vanilla and cardamom to a saucepan. 
  1. Add 4 tbsp La Vida Vegan White Coconut Spread for that creamy, soft coconut flavour. 
  1. Heat over medium heat, whisking well until everything dissolves and the mixture thickens slightly (do not let it boil!). 
  1. Stir in the amaretto at the end, if using. 
  1. Serve the eggnog warm or chilled in the prepared glasses, topped with a coconut truffle and a sprinkle of extra coconut.
