Vegan Heart Cookies 

Makes approx. 30 cookies 

Ingredients: 
250 g flour 
½ tsp baking powder 
120 g butter (or plant-based alternative) 
100 g organic cane sugar 
1 tsp vanilla extract 
2 tbsp applesauce 
2 tbsp maple syrup 
4 tbsp La Vida Vegan white coconut spread 
1 tsp red food colouring 

Method: 

  1. Preheat the oven to 175°C. 
  1. In a bowl, mix the flour and baking powder. 
  1. Place the butter in a microwave-safe bowl. Heat for about 10 seconds and stir until smooth. 
  1. Add the sugar to the warm butter and mix well. Then stir in the vanilla extract, applesauce and maple syrup. 
  1. Add the flour mixture to the wet ingredients and mix until a cohesive dough forms. 
  1. Chill the dough in the refrigerator for 10 minutes. 
  1. Place the dough between two sheets of baking paper and roll it out to about 6 mm thick (the baking paper prevents sticking). 
  1. Cut out heart-shaped cookies and place them on a baking tray lined with baking paper, leaving some space between them. 
  1. Bake for about 12 minutes at 175°C. 
  1. Remove from the oven and let cool for 10 minutes. 
  1. Want to glaze the cookies? Make sure they are completely cooled first. 
  1. Place the cookies on a wire rack and glaze with La Vida Vegan white coconut spread. Add a little food colouring for extra fun if you like. 
  1. Store in an airtight container at room temperature.
