Makes approx. 30 cookies
Ingredients:
250 g flour
½ tsp baking powder
120 g butter (or plant-based alternative)
100 g organic cane sugar
1 tsp vanilla extract
2 tbsp applesauce
2 tbsp maple syrup
4 tbsp La Vida Vegan white coconut spread
1 tsp red food colouring
Method:
- Preheat the oven to 175°C.
- In a bowl, mix the flour and baking powder.
- Place the butter in a microwave-safe bowl. Heat for about 10 seconds and stir until smooth.
- Add the sugar to the warm butter and mix well. Then stir in the vanilla extract, applesauce and maple syrup.
- Add the flour mixture to the wet ingredients and mix until a cohesive dough forms.
- Chill the dough in the refrigerator for 10 minutes.
- Place the dough between two sheets of baking paper and roll it out to about 6 mm thick (the baking paper prevents sticking).
- Cut out heart-shaped cookies and place them on a baking tray lined with baking paper, leaving some space between them.
- Bake for about 12 minutes at 175°C.
- Remove from the oven and let cool for 10 minutes.
- Want to glaze the cookies? Make sure they are completely cooled first.
- Place the cookies on a wire rack and glaze with La Vida Vegan white coconut spread. Add a little food colouring for extra fun if you like.
- Store in an airtight container at room temperature.
