Vegan Pistachio Blondies with White Chocolate 

Serves: 12 pieces 
Preparation time: approx. 50 minutes 
Baking time: 30–40 minutes 

Ingredients: 

  • 170 g margarine, melted and cooled 
  • 200 g brown sugar 
  • 100 ml plant-based milk 
  • 1 tsp vanilla extract 
  • 330 g flour 
  • 1 tbsp cornstarch 
  • 1 tsp baking powder 
  • ½ tsp salt 
  • 75 g chopped pistachios (more to taste) 
  • 100 g vegan white chocolate, chopped 
  • ½ jar La Vida Vegan pistachio spread 

Instructions: 

  1. Preheat the oven to 175 °C. Line a 20–23 cm baking pan with parchment paper and lightly grease. 
  1. In a bowl, mix the melted margarine with brown sugar, then add plant-based milk and vanilla extract. 
  1. In a separate bowl, combine the flour, cornstarch, baking powder, and salt, then add to the wet ingredients. Stir until just combined. 
  1. Fold in the pistachios and white chocolate. 
  1. Pour the batter into the prepared pan and spread evenly. Swirl the pistachio spread halfway through the batter. 
  1. Bake for 30–40 minutes, until the top is set. Let cool before cutting into pieces.
