Ingredients:
- 170 g margarine, melted and cooled
- 200 g brown sugar
- 100 ml plant-based milk
- 1 tsp vanilla extract
- 330 g flour
- 1 tbsp cornstarch
- 1 tsp baking powder
- ½ tsp salt
- 75 g chopped pistachios (more to taste)
- 100 g vegan white chocolate, chopped
- ½ jar La Vida Vegan pistachio spread
Instructions:
- Preheat the oven to 175 °C. Line a 20–23 cm baking pan with parchment paper and lightly grease.
- In a bowl, mix the melted margarine with brown sugar, then add plant-based milk and vanilla extract.
- In a separate bowl, combine the flour, cornstarch, baking powder, and salt, then add to the wet ingredients. Stir until just combined.
- Fold in the pistachios and white chocolate.
- Pour the batter into the prepared pan and spread evenly. Swirl the pistachio spread halfway through the batter.
- Bake for 30–40 minutes, until the top is set. Let cool before cutting into pieces.
