Vegan waffles

1 jar of La Vida Vegan hazelnut spread
25 g chia seeds
60 g coconut flour
1 tbsp. spelt flour
25 g almond flour
1 tbsp. corn starch
50 g cane sugar
2 dl almond milk
½ tsp. baking powder
½ tsp. baking soda
½ tbsp. apple cider vinegar
2 tbsp. coconut oil

  1. Pour the chia seeds, coconut flour, spelt flour, almond flour, corn starch, cane sugar, baking powder and baking soda into a food processor and mix until the chia seeds are broken.
  2. Melt 1 tablespoon of coconut oil on a low fire and put aside.
  3. Next, add 75 g La Vida Vegan, the melted coconut oil, almond milk, apple cider vinegar and vanilla extract to the dry ingredients and mix until it becomes a smooth batter.
  4. Put the batter aside for approximately two minutes and let it thicken. In the meantime, turn on the waffle iron.
  5. Coat the waffle iron with coconut oil by using a brush.
  6. Put 1 spoonful of the batter on each side of the waffle iron.
  7. Bake the waffles until they are crunchy and get them from the waffle iron.
  8. Repeat until you have no more batter left and serve the waffles with some extra La Vida Vegan coconut spread, blackberries and raspberries.
