Puffed Rice Donuts

Makes 12 to 16 pieces

8 dates
4 tablespoons peanut butter
75 g puffed rice
3 tablespoons of La Vida Vegan chocolate spread

Optional: extra puffed rice for decoration

The instructions

  1. Soak the dates in warm water for 10-15 minutes to soften them.
  2. Drain the dates and remove any pits.
  3. Place the dates and peanut butter in a food processor or blender and blend until a smooth paste forms.
  4. Add a little water to facilitate blending if the mixture is too thick.
  5. Gradually add the puffed rice to the date-peanut butter mixture and mix well until the puffed rice is fully coated with the mixture, achieving a firm consistency that is easy to shape.
  6. Shape the mixture into rings by pressing small portions firmly into a lightly greased donut mould. The shaping doesn’t have to be too tight, and it doesn’t have to overfill the moulds.
  7. Using a spoon, spread the La Vida Vegan chocolate spread over the donuts and fill the moulds with the remaining puffed rice mixture.
  8. Chill the donuts in the refrigerator for at least 30 minutes or until they are firm enough to serve.
  9. Enjoy these delicious puffed rice donuts with a delightful peanut butter and chocolate marbling!
  10. Serve immediately or store in the refrigerator in a sealed container for a few days.
